American as baseball, these are "home runs" from Grafton Village Cheese Company. Grafton's Classic Reserve (net wt. 8 oz.), aged for two years and sealed in black wax, has a creaminess that offsets the sharpness caused by the lactic acid in the cheese. In our opinion, it's well worth waiting for! Grafton Maple Smoked Cheddar (net wt. 8 oz.) is bathed in the cool smoke from smouldering hard maple wood, for a taste that could only be associated with Vermont. The smoke is used to season, not to preserve, and smoking this cheese results in a delicious nuance reminiscent of bacon. Great in omelettes or on your cheeseboard. Stone House Cheddar (net wt. 4 oz.) is the longest aged cheddar cheese produced in Vermont, and has a superior, strong cheddar flavor and a dry, crumbly texture. Aged over 6 years, limited quantities available.
