Only the leanest fresh pork is selected for our bacon, then slowly cured and smoked over an open applewood fire for a full, complex flavor. David Rosengarten described it as " . . . very real tasting, not overly salty, with a big hammy character and a lovely country smokehouse flavor". Thick-sliced, 1 lb. packages are convenient for the freezer.
